Kanda Bhaji (Onion Latkes) for Indian Hanukkah Celebrations

Mumbai-born Israeli living in New York, Eddna Samuel shares with us one of her favorite Hanukkah recipes.

For me, Hanukkah is a time to indulge in crispy, golden delights that bring us together. I believe our recipes hold the essence of our identity, connecting us to Jewish life, heritage, and community. Growing up in India, fried foods offered a reliable cooking method due to scarce ovens and water quality concerns, while also helping to preserve food longer. It’s important for me to share that we can can enjoy our fried foods responsibly while savoring our treats in moderation, being mindful of health and wellness. That being said, crispy latkes, vegan onion bhajis, and sweet sufganiyot top my list of fried Hanukkah delights! I hope the holiday offers you a chance to also share your favorite fried treats and family recipes, preserving stories and traditions. Here is one of my favorite recipes!

Crisp, golden, Kanda Bhaji Onion Latkes blend Indian and Jewish flavors. Inspired by traditional Maharashtrian onion fritters, these Hanukkah treats combine sautéed onions, chickpea flour, and spices that are fried to perfection. I hope you enjoy this delicious twist on classic latkes, perfect for Indian Hanukkah celebrations!

Ingredients

  • Approximately two medium onions
  • 1 bunch fresh cilantro( optional )
  • 1¼ cup chickpea flour
  • 1/4 cup water
  • ¼ teaspoon turmeric
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 green chilies (optional)
  • 1 teaspoon lemon juice
  • Vegetable oil for frying

Preparation

1. Slice onions and chop cilantro.

2. Add all ingredients to form a batter and mix together with salt.

3. Start to heat oil in deep pot.

4. Shape onion batter into rounds like falafel balls or flat like latkes.

5. Drop balls of onion batter into the oil.

6. Turn over to make sure golden brown and crisp on both sides.

7. Remove with slotted spoon and drain on paper towels.

8. Serve warm as appetizer or snack.
